The browser package isn’t opening website because it claims the PI’s time is behind (1970)

That suggests NTP isn’t working. If that’s the case, this should fix itself after around 2 minutes as the device then reaches out and fetches a less precise time from HTTP.

Is there a way to change the NTP source so that this doesn’t happen?

Modify your DHCP NTP option, check out NTP device config or use the UI in the configuration editor on a device‘s detail page to change the NTP server used.
